Instructions
- In a bowl, toss the diced chicken breast with 1 tablespoon of olive oil, smoked paprika, cumin, garlic powder, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until evenly coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Remove chicken from the skillet and set aside.
- Add the green beans to the same skillet, adding a splash more olive oil if needed. Sauté for 5-7 minutes, until tender-crisp. Add the zucchini noodles, remaining 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Cook for 2-3 minutes, just until the zucchini is heated through but still slightly firm.
- Return the cooked chicken to the skillet with the vegetables. Toss everything together and serve immediately.
Notes
Ensure you don't overcook the zucchini noodles, as they can become watery. A spiralizer is helpful for creating uniform zucchini noodles quickly.
