  1. In a bowl, toss the diced chicken breast with 1 tablespoon of olive oil, smoked paprika, cumin, garlic powder, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until evenly coated.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Remove chicken from the skillet and set aside.
  3. Add the green beans to the same skillet, adding a splash more olive oil if needed. Sauté for 5-7 minutes, until tender-crisp. Add the zucchini noodles, remaining 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Cook for 2-3 minutes, just until the zucchini is heated through but still slightly firm.
  4. Return the cooked chicken to the skillet with the vegetables. Toss everything together and serve immediately.

Notes

Ensure you don't overcook the zucchini noodles, as they can become watery. A spiralizer is helpful for creating uniform zucchini noodles quickly.
