- 1.5 pound beef sausage
- 1 yellow onion (medium, diced)
- 1 red bell pepper (diced)

- 1 can crushed tomatoes (28 ounce)
- 1 cup chicken broth

- 1.5 cup jasmine rice (uncooked)
- 2 tablespoon fresh parsley (chopped)
Instructions
- Before starting the skillet, cook the jasmine rice according to package directions. You can use a rice cooker or stovetop method. Set aside once cooked.
- Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the lean beef sausage and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add the diced yellow onion, red bell pepper, and green bell pepper to the skillet with the sausage. Sauté for 5-7 minutes until the vegetables start to soften.
- Stir in the minced garlic, smoked paprika, and dried oregano. Cook for 1 minute until fragrant.
- Pour in the crushed tomatoes and chicken broth. Season with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10 minutes, allowing the flavors to meld.
- Fluff the cooked jasmine rice with a fork and stir in the remaining 1/4 teaspoon of salt. Taste and adjust seasoning as desired.
- Serve the Smoky Sausage and Pepper Skillet over the herbed jasmine rice, garnished with fresh parsley.
