Ingredients
- 14 flour tortillas (8-inch size)
- 1.5 pound pulled pork (cooked, shredded)
- 0.75 cup barbecue sauce
- 3 cup sharp cheddar cheese (shredded)
- 0.5 red onion (medium, thinly sliced)
- 2 tablespoon butter (melted)
Instructions
- In a medium bowl, combine pulled pork and 3/4 cup barbecue sauce until pork is evenly coated.
- Preheat oven to 425 degrees F and lightly brush 2 large baking sheets with 1/2 tablespoon butter.
- Place 7 flour tortillas on the baking sheets. Scatter 1 1/2 cups sharp cheddar cheese across the tortillas. Layer with sauced pulled pork and thinly sliced red onion, then top with remaining 1 1/2 cups sharp cheddar cheese and remaining 7 tortillas.
- Brush top tortillas with the remaining 1 1/2 tablespoons melted butter.
- Bake for 12 minutes until tortillas are golden and crisp on the edges and cheese is bubbly. Let rest for 2 minutes before cutting into wedges.
Notes
Great use for leftover roasted or slow-cooked pork. Pack with extra BBQ sauce for dipping.
