Instructions
- Heat 1 tablespoon of olive oil in a large nonstick skillet over medium-high heat, add the cubed russet potatoes, cover, and cook for 7 minutes, stirring occasionally until golden and fork-tender.
- Push potatoes to one side of the skillet, add the remaining 1 tablespoon of olive oil, diced yellow onion, and ground pork, cooking for 5 minutes while crumbling the meat until cooked through to 160 degrees F.
- Stir in minced garlic, smoked paprika, salt, black pepper, and drained sweet corn, tossing thoroughly with the potatoes and pork for 3 minutes until hot and aromatic.
- Remove skillet from heat, let rest 2 minutes, and serve directly into warm dinner bowls.
