Smoky Paprika Pork and Russet Hash

  1. Heat 1 tablespoon of olive oil in a large nonstick skillet over medium-high heat, add the cubed russet potatoes, cover, and cook for 7 minutes, stirring occasionally until golden and fork-tender.
  2. Push potatoes to one side of the skillet, add the remaining 1 tablespoon of olive oil, diced yellow onion, and ground pork, cooking for 5 minutes while crumbling the meat until cooked through to 160 degrees F.
  3. Stir in minced garlic, smoked paprika, salt, black pepper, and drained sweet corn, tossing thoroughly with the potatoes and pork for 3 minutes until hot and aromatic.
  4. Remove skillet from heat, let rest 2 minutes, and serve directly into warm dinner bowls.

Notes

Cutting potatoes into uniform 1/2-inch pieces ensures they cook quickly and evenly in under 10 minutes.
