  1. In a shallow dish or zip-top bag, combine sirloin steak with 1 tablespoon olive oil, lime juice, chili powder, smoked paprika, ground cumin, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Rub the marinade evenly over the steak. Marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.
  2. Preheat oven to 400°F (200°C). On a large baking sheet, toss diced sweet potatoes, red bell pepper, and yellow bell pepper with the remaining 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  3. Spread vegetables in a single layer and roast for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.
  4. While vegetables roast, heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Once hot, sear the marinated steak for 3-5 minutes per side for medium-rare, or longer to desired doneness. Let the steak rest for 5-10 minutes before slicing.
  5. Slice the steak against the grain into thin strips. Serve immediately with the roasted sweet potatoes and bell peppers. Garnish with fresh chopped cilantro, if desired.

Notes

Ensure your skillet is very hot before searing the steak to get a good crust. Marinating the steak longer will enhance its flavor.
