  1. Heat 1 tablespoon olive oil in a very large skillet or Dutch oven over medium-high heat. Add 1 diced yellow onion and 2 diced red bell peppers, cooking for 4 minutes until softened.
  2. Add 2 pounds ground turkey to the pan. Season with 1 tablespoon chipotle chili powder, 1 tablespoon ground cumin, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Cook, breaking up the meat with a wooden spoon, for 6 to 8 minutes until browned and cooked through to an internal temperature of 165°F.
  3. Stir in 2 tablespoons tomato paste, 4 cups broccoli florets, 1 can drained chopped artichoke hearts, and 1 package riced cauliflower. Cover the skillet and let steam over medium heat for 6 minutes until the broccoli is crisp-tender and cauliflower is heated through.
  4. Remove the lid and stir well to combine all ingredients evenly. Garnish with 1/4 cup chopped fresh cilantro before serving.

Notes

Reheats cleanly in the microwave or in a covered skillet over medium-low heat with a splash of water.
