Smoky Chipotle Turkey Bowls

  1. Heat 1/2 tablespoon of the olive oil in a large nonstick skillet over medium-high heat. Add the green bell pepper and poblano pepper, sautéing for 4 minutes until tender-crisp.
  2. Add the ground turkey to the skillet with the peppers. Break up the meat with a wooden spoon and season with the chili powder, ground cumin, smoked paprika, dried oregano, and 3/4 teaspoon of the salt. Cook for 6 to 7 minutes until the turkey is thoroughly cooked and reaches an internal temperature of 165 degrees.
  3. In a separate medium skillet, heat the remaining 1/2 tablespoon of olive oil over medium heat. Add the riced cauliflower and remaining 1/4 teaspoon of salt, sautéing for 4 to 5 minutes until hot and tender.
  4. Divide the warm cauliflower rice between bowls, top with the seasoned turkey pepper mixture, and sprinkle with cheddar cheese, diced avocado, and fresh cilantro.

Notes

Store the second portion in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 2 minutes before adding fresh avocado.
