- 2 pound pork tenderloin (trimmed, cut into 1/2-inch cubes)
- 1 can black beans (15 oz can, drained and rinsed)
- 1 can sweet corn (15.25 oz can, drained)
- 1 red bell pepper (medium, diced)
- 1 yellow onion (medium, diced)
- 1 cup cheddar cheese (shredded)
- 6 flour tortillas (warmed)
- 1 tablespoon vegetable oil
- 1.5 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon salt
Instructions
- Season the diced pork tenderloin with ground cumin, smoked paprika, chili powder, and salt.
- Heat vegetable oil in a large deep skillet over medium-high heat. Add the pork and sear for 5 to 6 minutes, stirring occasionally, until browned and cooked to an internal temperature of 145°F.
- Add yellow onion and red bell pepper to the skillet. Sauté for 4 minutes until vegetables soften.
- Stir in drained black beans and sweet corn. Cook for 3 minutes until heated through.
- Remove skillet from heat and sprinkle shredded cheddar cheese over top. Cover for 2 minutes to allow cheese to melt.
- Serve hot scooped inside warm flour tortillas.
