Ingredients

- 1 teaspoon chipotle chili powder

- 1 head romaine lettuce (chopped)
- 1 avocado (medium, diced)
- 1 cup cherry tomatoes (halved)
- 2 tablespoon olive oil
- 2 tablespoon lime juice
Instructions
- Heat a large skillet over medium-high heat. Add the lean ground beef, chipotle chili powder, ground cumin, 1/2 teaspoon of the kosher salt, and 1/4 teaspoon of the black pepper. Cook for 7 to 8 minutes, breaking meat into crumbles, until browned and cooked through to 160 degrees Fahrenheit.
- In a small bowl, whisk together the olive oil, lime juice, remaining 1/4 teaspoon kosher salt, and remaining 1/4 teaspoon black pepper until combined.
- In a large salad bowl, combine the chopped romaine lettuce, drained black beans, drained sweet corn, halved cherry tomatoes, and diced avocado.
- Pour the lime dressing over the vegetable mixture and toss gently to coat.
- Divide the tossed salad among four serving bowls and top each evenly with the warm seasoned ground beef.
