  1. Heat olive oil in a large skillet over medium-high heat. Add the diced yellow onion and red bell pepper, cooking for 4 minutes until softened.
  2. Add the ground beef, breaking it apart with a wooden spoon. Cook for 6 to 8 minutes until thoroughly browned and reaching an internal temperature of 160°F. Drain any excess grease.
  3. Stir in the minced garlic, chili powder, ground cumin, dried oregano, salt, and black pepper, cooking for 1 minute until fragrant.
  4. Add the diced zucchini and canned fire-roasted diced tomatoes with their juices. Reduce heat to medium-low, cover, and simmer for 6 minutes until the zucchini is tender-crisp.
  5. Divide fresh baby spinach evenly among serving plates and spoon the hot picadillo beef skillet directly over the greens to gently wilt them. Garnish with fresh cilantro before serving.

Notes
