Ingredients
- 0.5 pound flank steak (trimmed)
- 1 tablespoon olive oil
- 0.5 teaspoon chipotle chili powder
- 0.5 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 0.5 cup cherry tomatoes (halved)
- 0.5 avocado (diced)
- 2 tablespoon fresh cilantro (chopped)
- 1 tablespoon lime juice (freshly squeezed)
Instructions
- Rub flank steak evenly with chipotle chili powder, ground cumin, 1/4 teaspoon of the salt, and black pepper.
- Heat 1/2 tablespoon of the olive oil in a heavy skillet over medium-high heat. Sear the steak for 4 to 5 minutes per side until nicely browned and the internal temperature reaches 135 degrees F for medium-rare.
- Transfer the steak to a cutting board and allow to rest for 5 minutes before slicing thinly against the grain.
- In a medium bowl, gently toss cherry tomatoes, avocado, fresh cilantro, lime juice, remaining 1/2 tablespoon olive oil, and remaining 1/4 teaspoon salt together. Serve alongside the sliced steak.
Notes
Always cut flank steak across the grain at a slight diagonal for the most tender bites.
