Smoky Chipotle Beef Tacos

  1. Start the rice: In a medium saucepan, combine 1 1/2 cups uncooked white rice with 2 1/4 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Stir in the juice from 1/2 lime and 1 tablespoon of chopped fresh cilantro.
  2. While the rice cooks, heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  3. Add the diced yellow onion to the skillet with the beef and cook until softened, about 3-5 minutes. Stir in the minced garlic, chili powder, ground cumin, dried oregano, and smoked paprika, cooking for 1 minute until fragrant.
  4. Stir in the chipotle in adobo sauce, beef broth, drained black beans, and diced tomatoes. Bring to a simmer, then reduce heat and let cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly. Season with salt and black pepper to taste.
  5. Warm the corn tortillas according to package directions (microwave, oven, or skillet). Serve the ground beef mixture in warm tortillas, alongside the cilantro-lime rice and lime wedges. Garnish with fresh cilantro and optional toppings as desired.

Notes

To make clean-up easier, you can line a baking sheet with foil and warm the tortillas in the oven.
