- 1 tablespoon olive oil
- 1.5 pound ground beef
- 1 yellow onion (medium, finely diced)
- 3 clove garlic (minced)
- 1 tablespoon chili powder
- 1.5 teaspoon ground cumin
- 1 teaspoon dried oregano
- 0.5 teaspoon smoked paprika
- 1.5 tablespoon chipotle in adobo sauce (minced)
- 1 cup beef broth
- 1 can black beans (15 ounce, rinsed and drained)
- 1 can diced tomatoes (14.5 ounce, undrained)
- 0.5 cup fresh cilantro (chopped)
- 1 lime (cut into wedges)
- 15 corn tortillas
- 1.5 cup white rice (uncooked)
- 2.25 cup water
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup shredded lettuce
- 0.5 cup diced tomato
- 0.5 cup sour cream
- 0.5 cup shredded cheese
Instructions
- Start the rice: In a medium saucepan, combine 1 1/2 cups uncooked white rice with 2 1/4 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Stir in the juice from 1/2 lime and 1 tablespoon of chopped fresh cilantro.
- While the rice cooks, heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add the diced yellow onion to the skillet with the beef and cook until softened, about 3-5 minutes. Stir in the minced garlic, chili powder, ground cumin, dried oregano, and smoked paprika, cooking for 1 minute until fragrant.
- Stir in the chipotle in adobo sauce, beef broth, drained black beans, and diced tomatoes. Bring to a simmer, then reduce heat and let cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly. Season with salt and black pepper to taste.
- Warm the corn tortillas according to package directions (microwave, oven, or skillet). Serve the ground beef mixture in warm tortillas, alongside the cilantro-lime rice and lime wedges. Garnish with fresh cilantro and optional toppings as desired.
Notes
To make clean-up easier, you can line a baking sheet with foil and warm the tortillas in the oven.
