Smoky Chicken and Black Bean Skillet Tacos

  1. Heat vegetable oil in a large skillet over medium-high heat. Add yellow onion, chicken breast, chili powder, ground cumin, smoked paprika, salt, and black pepper. Sauté for 7 to 8 minutes, stirring frequently, until the chicken is lightly browned and cooked through to an internal temperature of 165°F.
  2. Stir in canned black beans and canned tomato sauce. Reduce heat to medium-low and simmer for 6 minutes until the sauce slightly thickens and coats the chicken and beans.
  3. Sprinkle Monterey Jack cheese evenly across the top of the skillet. Cover with a lid for 2 to 3 minutes until the cheese is completely melted and bubbling.
  4. Warm corn tortillas according to package directions. Garnish the skillet with fresh cilantro and spoon the cheesy chicken and bean mixture directly into warm tortillas to serve.

Notes

Leftovers reheat easily in the microwave; store tortillas separately and warm just before serving.
