Smoky Cajun Pork Chops with Creamy Rice and Bell Peppers

  1. Rub boneless pork chops generously with Cajun seasoning and 1/2 tsp salt on both sides.
  2. Heat vegetable oil and 1 tbsp unsalted butter in a skillet over medium-high heat. Add pork chops and sear for 4 to 5 minutes per side until internal temperature reaches 145°F. Remove chops and let rest on a plate.
  3. In the same skillet, melt remaining 1 tbsp unsalted butter. Add diced red bell pepper and cook for 3 minutes until softened.
  4. Stir in long-grain white rice, chicken broth, and remaining 1/2 tsp salt. Bring to a boil, cover, reduce heat to low, and simmer for 18 minutes until rice is cooked.
  5. Uncover and stir heavy cream into the rice until smooth and creamy. Serve seared pork chops over the creamy bell pepper rice.
