Smoky Black Bean and Pork Quesadillas

  1. Heat 1/2 tablespoon of the avocado oil in a large skillet over medium-high heat. Add ground pork, chili powder, ground cumin, smoked paprika, and 3/4 teaspoon of the salt. Cook for 6 to 8 minutes, breaking meat into crumbles until browned and cooked to an internal temperature of 160°F. Stir in drained black beans to warm through, then transfer mixture to a bowl.
  2. In the same skillet, heat remaining 1/2 tablespoon of avocado oil over medium heat. Add frozen sweet corn and remaining 1/4 teaspoon of salt, sautéing for 4 to 5 minutes until tender. Stir in chopped fresh cilantro, transfer to a serving bowl, and keep warm.
  3. Wipe out skillet and return to medium heat. Place a flour tortilla in the pan, layer one half with shredded Monterey Jack cheese and seasoned pork and bean filling, fold over, and cook for 2 to 3 minutes per side until golden brown and cheese is melted. Repeat for remaining tortillas.
  4. Slice quesadillas into wedges and serve warm with the seasoned sweet corn.

Notes

To speed up cooking, assemble quesadillas on a large baking sheet and toast them under the oven broiler for 2 to 3 minutes per side.
