Smoky Beef and Summer Corn Rice Skillet

  1. Heat 1 tablespoon of olive oil in a large deep skillet over medium-high heat.
  2. Add 1 pound of lean ground beef, 1 diced yellow onion, and 1 diced red bell pepper. Cook for 5 to 6 minutes, breaking up the beef with a wooden spoon, until the meat is browned through to at least 160°F and the vegetables soften.
  3. Stir in 3 minced cloves of garlic, 1 1/2 teaspoons of smoked paprika, 1 teaspoon of dried thyme, 1 teaspoon of kosher salt, and 1/2 teaspoon of black pepper, cooking for 1 minute until fragrant.
  4. Add 1 1/2 cups of uncooked white rice, 3 cups of gluten-free beef broth, and 1 1/2 cups of sweet corn. Stir well to combine and bring the liquid to a rolling boil.
  5. Reduce heat to low, cover the skillet tightly with a lid, and simmer undisturbed for 15 minutes until the rice is tender and the liquid is absorbed.
  6. Remove from heat, let rest covered for 2 minutes, fluff gently with a fork, and garnish with 2 tablespoons of fresh chopped parsley before serving.
