  1. Preheat oven to 400 degrees Fahrenheit. Spread sliced zucchini across a baking sheet, mist with olive oil cooking spray, season with 1/4 teaspoon of the salt and black pepper, and roast for 18 minutes until tender and lightly browned.
  2. Heat olive oil in a large Dutch oven or skillet over medium heat. Add diced yellow onion, carrots, and celery, cooking 6 minutes until softened.
  3. Add minced garlic and ground turkey. Cook 6 to 8 minutes, breaking meat apart with a spoon until fully browned and cooked through to 165 degrees Fahrenheit.
  4. Stir in canned crushed tomatoes, dried oregano, dried basil, and remaining 3/4 teaspoon salt. Lower heat to medium-low, cover partially, and gently simmer for 20 minutes to meld flavors.
  5. Meanwhile, bring a large pot of salted water to a boil. Cook gluten-free penne according to package directions for 10 minutes until al dente; drain pasta thoroughly.
  6. Portion gluten-free penne into wide bowls, ladle the rich turkey bolognese over top, and serve with roasted zucchini on the side.
