Ingredients
- 2.25 pound beef chuck roast (cut into 1-inch cubes)
- 1 tablespoon canola oil
- 3 carrots (peeled and sliced)
- 1.5 pound russet potato (peeled and diced)
- 32 fluid ounce beef broth
- 2 tablespoon tomato paste

Instructions
- Heat canola oil in a skillet over medium-high heat. Brown beef chuck roast cubes on all sides for 6 minutes, then transfer to Dutch oven or pot.
- Add sliced carrots, diced russet potatoes, tomato paste, dried thyme, and salt into the pot.
- Pour in beef broth, bring to a boil, cover, reduce heat to low, and simmer for 50 minutes until beef and potatoes are fork-tender.
- Ladle hearty beef stew into bowls and serve warm.
