Slow Cooker Citrus Mojo Pork

  1. Pat the pork tenderloin dry. In a small bowl, whisk together the orange juice, lime juice, minced garlic, dried oregano, ground cumin, 1/2 teaspoon of the salt, and 1/4 teaspoon of the black pepper to create the mojo marinade.
  2. Place the pork tenderloin in your slow cooker. Pour the mojo marinade over the pork.
  3. Cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the pork is very tender and shreds easily with a fork.
  4. About 30 to 40 minutes before serving, preheat your oven to 400°F. On two separate baking sheets (or one large, if space permits), toss the sweet potato cubes with 1 tablespoon of the olive oil and the remaining 1/2 teaspoon salt. Toss the green beans with the remaining 1 tablespoon olive oil and 1/4 teaspoon black pepper.
  5. Roast the sweet potatoes for 20 to 25 minutes, flipping halfway, until tender and lightly caramelized. Add the green beans to the oven for the last 10 to 15 minutes of roasting, until tender-crisp.
  6. Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded pork to the sauce in the slow cooker to keep it warm and flavorful.
  7. Serve the shredded mojo pork with roasted sweet potatoes and green beans. Garnish with fresh cilantro if desired.

Notes

Pork tenderloin is a very lean cut. For best results, avoid overcooking in the slow cooker to keep it moist.
