Ingredients
- 1 yellow onion (medium, chopped)
- 1 carrot (medium, chopped or shredded)
- 1 green bell pepper (medium, chopped)
- 1 pound ground turkey (85% lean)
- 8 fluid ounce tomato sauce (low-sodium)
- 14.5 ounce whole tomatoes (crushed)
- 8 ounce mushrooms (drained)
- 0.25 cup barbecue sauce
- 6 whole wheat buns (split in half)
Instructions
- Sauté yellow onion, carrot, green bell pepper, and ground turkey or chicken in a large pan over medium heat for 5 minutes.
- Add tomato sauce, whole tomatoes, mushrooms, barbecue sauce, and bring to boil.
- Reduce heat and simmer for 10 minutes, stirring occasionally.
- Uncover and cook for an additional 3 minutes or until thick.
- Serve open-faced on toasted or plain whole wheat buns.
Notes
You can also use 8 ounce of fresh mushrooms instead of canned.
