Ingredients
- 4 flour tortillas (6 inch)
- 0.5 teaspoon olive oil (extra virgin)
- 2 cup mushrooms (sliced)
- 1 green bell pepper (thinly sliced)
- 1 red onion (thinly sliced)
- 2 teaspoon garlic (minced)
- 0.5 cup tomato sauce (no salt added)
- 0.5 cup mozzarella cheese (shredded, fat-free)
- 2 teaspoon Parmesan cheese (grated, reduced-fat)
Instructions
- Heat oven to 400°F.
- Place flour tortillas on 2 large baking sheets.
- Cook, flipping once, until crisp (about 10 minutes).
- Set aside.
- Meanwhile, heat olive oil in large skillet over medium heat.
- Add mushrooms, green bell pepper, red onion, and garlic.
- Cook until all vegetables are soft and tender (about 10 minutes).
- Set aside.
- Spread each tortilla crust with 2 tablespoons tomato sauce, 1/4 cup vegetable mixture, 2 tablespoons mozzarella cheese, and 1/2 teaspoon of Parmesan cheese.
- Repeat with remaining crusts and topping ingredients.
- Transfer pizzas to same baking sheets.
- Cook until cheese is melted and edges of tortillas are golden brown (about 10 minutes).
