  1. Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add the 1 pound chicken breast pieces and cook for 3-4 minutes until lightly browned. Remove chicken and set aside.
  2. Add the 1 diced yellow onion to the skillet and cook for 3 minutes until softened. Stir in the 2 minced garlic cloves, 1 teaspoon ground ginger, 1 teaspoon curry powder, and 1/2 teaspoon cayenne pepper; cook for 1 minute until fragrant.
  3. Pour in the 1 can diced tomatoes and 2 cups chicken broth. Bring to a simmer, then stir in the 1/2 cup creamy peanut butter until smooth. Return the cooked chicken to the skillet.
  4. Reduce heat to medium-low, cover, and simmer for 5-7 minutes, or until chicken is cooked through. Season the stew with salt and black pepper to taste.
  5. While the stew simmers, bring 2 1/4 cups water to a boil in a separate pot. Stir in the 1 1/2 cups quick-cook couscous, cover, remove from heat, and let stand for 5 minutes until water is absorbed. Fluff with a fork.
  6. Steam the 1 pound fresh green beans until tender-crisp, about 3-5 minutes. Serve the West African Peanut Stew over the fluffy couscous, with the steamed green beans on the side.
