Instructions
- Heat 1 tablespoon olive oil in a large, deep skillet over medium-high heat. Add 1 pound ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add the diced carrot and celery stalk to the skillet. Cook for 3-4 minutes, stirring, until they begin to soften.
- Stir in 2 cloves minced garlic and cook for 1 minute until fragrant.
- Add 1 (15-ounce) can diced tomatoes, 1 (15-ounce) can chickpeas, 1/2 teaspoon dried oregano, 1/4 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat to medium-low and cook for 5-7 minutes, allowing flavors to meld.
- While the turkey mixture simmers, prepare the couscous. Place 1 cup whole wheat couscous in a heatproof bowl. Pour 1 1/2 cups heated chicken broth over the couscous, cover tightly, and let stand for 5 minutes, or until all liquid is absorbed. Fluff with a fork.
- Serve the hearty turkey and chickpea mixture over the fluffed couscous.
Notes
This dish is very flexible. Feel free to add other vegetables like bell peppers or spinach during the simmering stage for extra nutrition.
