  1. Heat canola oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat and transfer turkey to a plate.
  2. Add finely diced yellow onion to the same skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Pour in the chicken broth, then add the fresh spinach. Cook, stirring, until the spinach wilts, about 2-3 minutes. Return the cooked turkey to the skillet and stir to combine. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Remove skillet from heat and set aside.
  4. Prepare the grits: In a medium saucepan, bring 3 cups water, 1/4 cup milk, and 1/4 teaspoon salt to a boil. Gradually whisk in the quick-cooking grits. Reduce heat to low, cover, and simmer for 5-7 minutes, stirring occasionally, until thickened. Remove from heat and stir in butter and shredded sharp cheddar cheese until melted and creamy.
  5. Serve the turkey and greens mixture over the hot cheese grits.

Notes

Ensure grits are whisked constantly when adding to boiling liquid to prevent lumps. Leftovers of the turkey and greens mixture store well separately.
