Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 yellow onion (medium, chopped)
- 2 carrots (finely diced)
- 2 celery stalks (finely diced)
- 3 clove garlic (minced)
- 1 can crushed tomatoes
- 0.5 cup chicken broth
- 2 tablespoon tomato paste
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 0.5 teaspoon red pepper flakes
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 12 ounce tagliatelle pasta
- 0.25 cup grated Parmesan cheese
- 4 cup mixed greens salad
- 2 tablespoon Italian dressing
Instructions
- Heat 1 tablespoon olive oil in a large deep skillet or Dutch oven over medium-high heat. Add 1 pound ground turkey and cook, breaking it apart, until browned, about 6-8 minutes. Drain any excess fat and remove turkey to a plate.
- Add 1 chopped yellow onion, 2 finely diced carrots, and 2 finely diced celery stalks to the same skillet. Sauté for 5-7 minutes until vegetables are softened. Stir in 3 minced garlic cloves and cook for 1 minute until fragrant.
- Return the cooked turkey to the skillet. Stir in 1 can crushed tomatoes, 1/2 cup chicken broth, 2 tablespoons tomato paste, 1 teaspoon dried basil, 1 teaspoon dried oregano, optional 1/2 teaspoon red pepper flakes, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat to low, cover, and cook for at least 25-30 minutes, stirring occasionally, allowing flavors to meld. The longer it simmers, the more flavor it will develop.
- While the Bolognese simmers, cook 12 ounces tagliatelle pasta according to package directions until al dente. Drain well.
- In a separate bowl, toss 4 cups mixed greens salad with 2 tablespoons Italian dressing.
- Serve the turkey Bolognese over the cooked tagliatelle. Garnish with optional 1/4 cup grated Parmesan cheese and serve alongside the green salad.
Notes
This Bolognese sauce is excellent for making ahead as flavors deepen over time. It freezes well too. For a smoother sauce, you can briefly blend a portion of it before adding the turkey back in.
