Ingredients
- 1.5 pound ground beef (80/20 lean)
- 1 tablespoon olive oil
- 1 yellow onion (large, chopped)
- 2 bell peppers (any color, chopped)
- 2 clove garlic (minced)
- 28 ounce diced tomatoes (undrained)
- 0.5 cup beef broth
- 1 teaspoon Italian seasoning (dried)
- 0.5 teaspoon onion powder
- 1 teaspoon salt and black pepper (to taste)
- 1 crusty bread (for serving)
Instructions
- In a large, deep skillet or Dutch oven, heat the 1 tablespoon olive oil over medium-high heat. Add the 1 1/2 pounds ground beef and cook, breaking it apart with a spoon, until browned, about 6-8 minutes. Drain any excess fat.
- Add the 1 large yellow onion and 2 bell peppers to the skillet and cook, stirring, until softened, about 5 minutes.
- Stir in the 2 cloves garlic, 1 can diced tomatoes, 1/2 cup beef broth, 1 teaspoon dried Italian seasoning, and 1/2 teaspoon onion powder. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Bring to a simmer.
- Reduce heat to low, cover, and simmer for 5 minutes to allow flavors to meld.
- Serve the skillet supper hot, directly from the pan, with crusty bread or dinner rolls on the side.
Notes
This meal is easily adaptable! Feel free to add other quick-cooking vegetables like frozen peas or corn during the last few minutes of simmering.
