  1. In a large, deep skillet or Dutch oven, heat the 1 tablespoon olive oil over medium-high heat. Add the 1 1/2 pounds ground beef and cook, breaking it apart with a spoon, until browned, about 6-8 minutes. Drain any excess fat.
  2. Add the 1 large yellow onion and 2 bell peppers to the skillet and cook, stirring, until softened, about 5 minutes.
  3. Stir in the 2 cloves garlic, 1 can diced tomatoes, 1/2 cup beef broth, 1 teaspoon dried Italian seasoning, and 1/2 teaspoon onion powder. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Bring to a simmer.
  4. Reduce heat to low, cover, and simmer for 5 minutes to allow flavors to meld.
  5. Serve the skillet supper hot, directly from the pan, with crusty bread or dinner rolls on the side.

Notes

This meal is easily adaptable! Feel free to add other quick-cooking vegetables like frozen peas or corn during the last few minutes of simmering.
