Ingredients
- 1.5 pound shrimp (raw, peeled and deveined)
- 2 red bell peppers (medium, seeded and diced)
- 2 tablespoon olive oil (extra virgin)
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 0.5 cup feta cheese (crumbled)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced red bell peppers and cook for 5 minutes until soft and slightly blistered.
- Add the raw shrimp, dried thyme, salt, and black pepper to the skillet. Cook, stirring frequently, for 4 minutes until the shrimp turn pink, opaque, and cooked through.
- Remove skillet from heat, scatter the crumbled feta cheese over the top, and cover with a lid for 2 minutes to gently soften the cheese before serving.
Notes
Feta cheese is naturally low in lactose, making it well-tolerated on a low-FODMAP diet.
