- 8 ounce seitan (thinly sliced)

- 24 ounce marinara sauce

Instructions
- Bring a large pot of salted water to a boil for the pasta.
- While water heats, warm olive oil in a large skillet over medium heat. Add thinly sliced seitan and cook for 3-4 minutes until lightly browned. Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in marinara sauce and vegetable broth. Add dried oregano and black pepper. Bring to a gentle simmer. Reduce heat to low, cover, and let simmer while the pasta cooks.
- Add penne pasta to the boiling water and cook according to package directions until al dente.
- Drain the pasta and add it directly to the skillet with the seitan marinara. Toss to combine.
- In a separate bowl, toss mixed greens with Italian dressing.
- Serve the Skillet Seitan Marinara with Penne alongside the green salad. Garnish with fresh basil, if desired.
Notes
Leftover pasta reheats well. Store the salad dressing separately from the greens for best freshness.
