  1. First, prepare the brown rice. Rinse 1 1/2 cups of brown rice thoroughly under cold water. Cook according to package directions, typically combining with 3 cups of water in a pot, bringing to a boil, then reducing heat to low, covering, and simmering for 35-40 minutes, or until water is absorbed and rice is tender. Keep warm.
  2. While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the 18 ounces of Impossible Steak Bites to the skillet in a single layer. Cook for 3-4 minutes, turning occasionally, until browned on all sides.
  4. Add 1 pound of trimmed green beans and 2 minced cloves of garlic to the skillet. Sauté for 3-5 minutes, until green beans are tender-crisp.
  5. Stir in the rinsed and drained can of cannellini beans, 2 tablespoons of low-sodium soy sauce, and 1/4 teaspoon of black pepper. Cook for another 1-2 minutes to heat the beans through and coat everything evenly.
  6. Serve the skillet mixture immediately over the cooked brown rice.
