Ingredients
- 1 tablespoon olive oil
- 1.5 pound chicken sausage (pre-cooked, sliced into 1/2-inch rounds)
- 1 yellow onion (medium, sliced)
- 2 bell peppers (sliced)
- 2 clove garlic (minced)
- 1 teaspoon dried Italian seasoning
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1.5 cup couscous (dry)
- 1.5 cup chicken broth
Instructions
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced chicken or turkey sausage and cook for 3-5 minutes, turning occasionally, until lightly browned. Remove sausage from the skillet and set aside.
- Add the sliced yellow onion and sliced bell peppers to the same skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables begin to soften. Stir in the minced garlic and dried Italian seasoning, cooking for 1 minute more until fragrant.
- Return the cooked sausage to the skillet with the vegetables. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Stir to combine.
- Meanwhile, bring 1 1/2 cups chicken broth to a boil in a small saucepan. Add the dry couscous, stir once, cover, remove from heat, and let stand for 5 minutes, or until the liquid is absorbed and couscous is fluffy.
- Serve the skillet sausage and peppers hot, alongside the fluffy couscous.
Notes
Any type of pre-cooked sausage (chicken, turkey, or pork) can be used in this recipe.
