Instructions

  1. Cook the white rice according to package directions, typically by combining 2 cups white rice with 4 cups water in a saucepan, bringing to a boil, then reducing heat, covering, and simmering for about 15 minutes, until water is absorbed. Set aside.
  2. While rice is cooking, heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add 1 1/2 pounds ground pork and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  3. Add 0.5 each diced yellow onion, 3 cloves minced garlic, and 1 teaspoon grated fresh ginger to the skillet. Cook for another 3-4 minutes, until the onion softens and becomes fragrant.
  4. Stir in 16 ounces frozen green beans. Cook for 5-7 minutes, stirring occasionally, until the green beans are tender-crisp.
  5. In a small bowl, whisk together 1/4 cup low-sodium soy sauce, 1 tablespoon cornstarch, and 2 tablespoons water until smooth.
  6. Pour the soy sauce mixture over the pork and green beans in the skillet. Cook, stirring constantly, until the sauce thickens and coats the ingredients, about 1-2 minutes. Season with 1/2 teaspoon black pepper.
  7. Serve the Skillet Pork & Green Bean Stir-fry immediately over the cooked white rice.
