- 1 tablespoon vegetable oil
- 1 pound ground pork
- 1 yellow onion (medium, sliced)
- 2 clove garlic (minced)
- 1 green bell pepper (large, sliced)
- 1 red bell pepper (large, sliced)
- 0.25 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 2 cup white rice (cooked)
Instructions
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the ground pork and cook, breaking it apart, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set turkey aside.
- Add the sliced yellow onion, green bell pepper, and red bell pepper to the same skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Return the cooked pork to the skillet. In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, and sesame oil. Pour the sauce over the pork and vegetables, tossing to coat.
- Cook for 2-3 minutes, stirring, until the sauce thickens slightly and coats everything well.
- Serve hot over cooked white rice.
Notes
You can prepare the white rice ahead of time or use quick-cook rice to ensure this meal fits within the 30-minute timeframe. For a lighter touch, use low-sodium soy sauce.
