  1. Heat 1 tablespoon of olive oil in a large oven-safe skillet or cast iron pan over medium-high heat. Add the cubed potatoes and cook, stirring occasionally, for 8-10 minutes until golden brown and tender. Season lightly with salt and pepper halfway through cooking.
  2. Push the potatoes to one side of the skillet. Add the ground beef to the other side and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Stir in the yellow onion and garlic with the beef, sautéing for 2-3 minutes until softened and fragrant.
  4. Combine the beef, onions, garlic, and potatoes in the skillet. Stir in chili powder, ground cumin, smoked paprika, remaining 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix well.
  5. Sprinkle the shredded Monterey Jack cheese evenly over the mixture in the skillet. Cover the skillet or transfer to a preheated oven (set to 350°F if using oven, or use broiler for 1-2 minutes) just until the cheese is melted and bubbly, about 2-3 minutes.
  6. Remove from heat and garnish with chopped fresh cilantro before serving directly from the skillet.

You can add a dollop of your favorite salsa or a slice of avocado for extra freshness before serving.
