- 1.25 pound ground beef (90% lean)
- 1.5 pound small potatoes (cut into 1/2-inch cubes)
- 1 tablespoon olive oil
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 teaspoon chili powder
- 0.5 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 cup Monterey Jack cheese (shredded)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon of olive oil in a large oven-safe skillet or cast iron pan over medium-high heat. Add the cubed potatoes and cook, stirring occasionally, for 8-10 minutes until golden brown and tender. Season lightly with salt and pepper halfway through cooking.
- Push the potatoes to one side of the skillet. Add the ground beef to the other side and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain any excess fat.
- Stir in the yellow onion and garlic with the beef, sautéing for 2-3 minutes until softened and fragrant.
- Combine the beef, onions, garlic, and potatoes in the skillet. Stir in chili powder, ground cumin, smoked paprika, remaining 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix well.
- Sprinkle the shredded Monterey Jack cheese evenly over the mixture in the skillet. Cover the skillet or transfer to a preheated oven (set to 350°F if using oven, or use broiler for 1-2 minutes) just until the cheese is melted and bubbly, about 2-3 minutes.
- Remove from heat and garnish with chopped fresh cilantro before serving directly from the skillet.
Notes
