Skillet Mediterranean Ground Turkey & Zucchini

  1. Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add 1 1/2 pounds ground turkey and cook, breaking it up, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add 1 medium diced yellow onion and 3 minced garlic cloves to the skillet. Cook for 3-4 minutes until the onion softens.
  3. Stir in 2 medium diced zucchini, 1 can diced tomatoes (undrained), 1 teaspoon dried oregano, 1/2 teaspoon dried basil, and 1/2 teaspoon salt and 1/4 teaspoon black pepper. Bring to a simmer, cover, and cook for 5-7 minutes, or until zucchini is tender-crisp.
  4. While the turkey mixture simmers, prepare the quick-cooking couscous. In a medium bowl, combine 1 1/2 cups quick-cooking couscous with 1 1/2 cups hot chicken broth. Cover and let stand for 5 minutes, then fluff with a fork.
  5. Serve the Mediterranean ground turkey and zucchini mixture over the fluffy couscous. Garnish with fresh parsley, if desired.
