Ingredients
- 1 pound chicken breast (boneless, skinless, cut into 4 cutlets or sliced thinly for quicker cooking)
- 2 tablespoon olive oil (divided)
- 2 tablespoon lemon juice
- 1 tablespoon dried parsley
- 1 tablespoon dried oregano
- 1 teaspoon black pepper
- 0.5 teaspoon salt
- 1 pound green beans (trimmed)
Instructions
- Pat the chicken breast cutlets dry with paper towels. In a shallow dish, sprinkle both sides of the chicken with 1 tablespoon of dried parsley, 1 tablespoon of dried oregano, 1 teaspoon of black pepper, and 1/2 teaspoon of salt. Drizzle with 1 tablespoon of lemon juice.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken to the hot skillet and cook for 4 to 6 minutes per side, depending on thickness, until golden brown and cooked through (internal temperature reaches 165°F). Remove chicken from the skillet and set aside to rest.
- While the chicken cooks, steam the trimmed fresh green beans. You can do this by placing them in a steamer basket over a pot of boiling water for 5 to 7 minutes, or in a microwave-safe bowl with a splash of water, covered, for 3 to 5 minutes, until tender-crisp.
- Serve the skillet lemon pepper chicken immediately with the steamed green beans.
Notes
To ensure even cooking and juiciness, aim for chicken cutlets of similar thickness. You can pound thicker chicken breasts gently with a meat mallet between two pieces of plastic wrap.
