- 3.5 pound cod fillets
- 3 tablespoon olive oil
- 0.5 teaspoon kosher salt
- 0.25 cup lemon juice (freshly squeezed)

- 2 pound baby potatoes (quartered)
- 1.5 pound asparagus (trimmed)
Instructions
- Preheat oven to 400°F (200°C) for the asparagus. On a baking sheet, toss 1 1/2 pounds trimmed asparagus with 1 tablespoon olive oil. Roast for 10-12 minutes, or until tender-crisp.
- While asparagus roasts, cook the baby potatoes: Place 2 pounds quartered baby potatoes in a microwave-safe bowl with 1/4 cup water. Cover and microwave on high for 8-10 minutes, or until fork-tender. Alternatively, boil on stovetop until tender.
- Prepare the cod: Pat 3 1/2 pounds cod fillets dry with paper towels. Heat 2 tablespoons olive oil in a large non-stick skillet over medium-high heat. Season the cod with 1/2 teaspoon kosher salt.
- Place cod fillets in the hot skillet. Cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
- Once cooked, remove the skillet from heat. Squeeze 1/4 cup fresh lemon juice over the cod and sprinkle with 3 tablespoons chopped fresh dill.
- Serve the lemon dill cod with the roasted asparagus and cooked baby potatoes. Enjoy immediately for the best texture.
Notes
