Instructions

  1. Bring a large pot of lightly salted water to a boil. Add whole wheat spaghetti and cook according to package directions until al dente. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large skillet or wok over medium-high heat. Add Impossible Ground Meat and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess liquid.
  3. Add chopped yellow onion, minced garlic, and grated fresh ginger to the skillet. Cook for 2-3 minutes until fragrant.
  4. Stir in broccoli florets and cook for 3-5 minutes, until tender-crisp.
  5. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, brown sugar, and black pepper. Pour the sauce over the Impossible meat and vegetables in the skillet.
  6. Stir in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes.
  7. Add the cooked and drained whole wheat spaghetti to the skillet and toss everything together to coat evenly. Serve immediately.

Notes

If you prefer a little heat, add 1/2 teaspoon of red pepper flakes to the sauce mixture.
