Ingredients
- 1.25 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 1 tablespoon olive oil
- 1 teaspoon Herbes de Provence
- 0.5 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 12 ounce fresh green beans (trimmed)
- 0.5 cup chicken broth
- 1 tablespoon butter
- 2 cup pearl couscous (quick-cooking)
Instructions
- In a medium bowl, toss the chicken breast pieces with olive oil, Herbes de Provence, garlic powder, salt, and black pepper until well coated.
- Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
- While the chicken cooks, prepare the quick-cooking pearl couscous according to package directions.
- Add the fresh green beans and chicken broth to the same skillet. Bring to a simmer, then cover and cook for 5-7 minutes, or until green beans are tender-crisp.
- Return the cooked chicken to the skillet with the green beans. Stir in the butter until melted. Serve immediately alongside the cooked pearl couscous.
