  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  2. Add chopped yellow onion, minced garlic, and chopped red bell pepper to the skillet. Sauté for 5 minutes until vegetables are tender-crisp.
  3. Stir in rinsed uncooked quinoa, vegetable broth, salt, black pepper, and dried oregano. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until most of the liquid is absorbed and quinoa is starting to fluff.
  4. Stir in chopped zucchini and fresh spinach. Cover and cook for another 5 minutes, or until zucchini is tender and spinach is wilted. Fluff with a fork before serving.
