- 1 package cauliflower rice (16 oz frozen package)
- 1 can fire-roasted diced tomatoes (14.5 oz can)
- 2 zucchinis (medium, diced)
- 1 yellow onion (medium, diced)
- 4 clove garlic (minced)
- 1 tablespoon olive oil (extra virgin)
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon dried oregano
- 1.5 teaspoon salt
- 0.5 teaspoon black pepper (ground)
- 0.5 cup fresh cilantro (chopped)
- 1 lime (juiced)
Instructions
- Heat olive oil in a large skillet over medium-high heat for 2 minutes. Add yellow onion, garlic, and diced zucchini, cooking for 4 minutes until softened.
- Add ground beef to the skillet, breaking it apart with a spoon. Season with ground cumin, chili powder, dried oregano, 1 teaspoon of salt, and black pepper. Cook for 6 to 7 minutes until browned.
- Stir in fire-roasted diced tomatoes and black beans. Bring to a gentle simmer for 5 minutes until flavors meld and liquid reduces slightly.
- In a separate nonstick pan, microwave or heat cauliflower rice for 4 minutes, seasoning with remaining 1/2 teaspoon salt and lime juice.
- Serve ground beef picadillo hot over cauliflower rice, garnished with chopped fresh cilantro.
