  1. Heat olive oil in a large skillet over medium-high heat for 2 minutes. Add yellow onion, garlic, and diced zucchini, cooking for 4 minutes until softened.
  2. Add ground beef to the skillet, breaking it apart with a spoon. Season with ground cumin, chili powder, dried oregano, 1 teaspoon of salt, and black pepper. Cook for 6 to 7 minutes until browned.
  3. Stir in fire-roasted diced tomatoes and black beans. Bring to a gentle simmer for 5 minutes until flavors meld and liquid reduces slightly.
  4. In a separate nonstick pan, microwave or heat cauliflower rice for 4 minutes, seasoning with remaining 1/2 teaspoon salt and lime juice.
  5. Serve ground beef picadillo hot over cauliflower rice, garnished with chopped fresh cilantro.
