Instructions

  1. In a medium saucepan, combine white rice and 4 cups of water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until water is absorbed. Fluff with a fork and stir in 1/4 cup chopped fresh cilantro and lime juice. Keep warm.
  2. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  3. Add diced yellow onion and green bell pepper to the skillet with the beef. Cook until vegetables soften, about 5 minutes.
  4. Stir in minced garlic, chili powder, ground cumin, 1 teaspoon salt, and black pepper. Cook for 1 minute until fragrant.
  5. Add undrained diced tomatoes and rinsed and drained black beans to the skillet. Bring to a simmer and cook for 5 minutes, stirring occasionally, until heated through and flavors have melded. Taste and adjust remaining salt if needed.
  6. Serve the ground beef and bean mixture over the cilantro-lime rice, garnished with the remaining 1/4 cup fresh cilantro.
