Ingredients
- 1 tablespoon olive oil
- 1.5 pound ground beef (85/15 lean)
- 1 yellow onion (large, diced)
- 3 clove garlic (minced)
- 1 green bell pepper (diced)
- 1 can diced tomatoes (14.5 ounce, undrained)
- 2 can black beans (15 ounce, rinsed and drained)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1.5 teaspoon salt
- 0.5 teaspoon black pepper
- 2 cup white rice (uncooked)
- 4 cup water (for rice)
- 0.5 cup fresh cilantro (chopped, for rice and garnish)
- 2 tablespoon lime juice (for rice)
Instructions
- In a medium saucepan, combine white rice and 4 cups of water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until water is absorbed. Fluff with a fork and stir in 1/4 cup chopped fresh cilantro and lime juice. Keep warm.
- Meanwhile, heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add diced yellow onion and green bell pepper to the skillet with the beef. Cook until vegetables soften, about 5 minutes.
- Stir in minced garlic, chili powder, ground cumin, 1 teaspoon salt, and black pepper. Cook for 1 minute until fragrant.
- Add undrained diced tomatoes and rinsed and drained black beans to the skillet. Bring to a simmer and cook for 5 minutes, stirring occasionally, until heated through and flavors have melded. Taste and adjust remaining salt if needed.
- Serve the ground beef and bean mixture over the cilantro-lime rice, garnished with the remaining 1/4 cup fresh cilantro.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheats well in the microwave or on the stovetop.
