Skillet Ground Beef and Rice

  1. In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
  2. Add yellow onion and red bell pepper to the skillet. Cook, stirring occasionally, until softened, about 5 minutes.
  3. Stir in minced garlic, cumin, dried oregano, and paprika. Cook for 1 minute more, until fragrant.
  4. Stir in diced tomatoes (undrained), chicken broth, and uncooked brown rice. Bring to a simmer.
  5. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
  6. Stir in frozen corn, 1 teaspoon salt, and 1/2 teaspoon black pepper. Cook, uncovered, for an additional 3-5 minutes, or until heated through.
  7. Remove from heat and let stand for 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

This one-pot skillet meal is excellent for meal prep. Portions can be stored individually and reheated in the microwave for a quick grab-and-go lunch or dinner.
