Ingredients
- 1 pound ground beef (85/15 lean)
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 cup long-grain white rice (uncooked)
- 2 cup beef broth
- 10 ounce diced tomatoes (undrained)
- 1 cup frozen mixed vegetables
- 0.5 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 5 ounce green salad mix
- 2 tablespoon Italian dressing (dairy-free)
Instructions
- In a large, oven-safe skillet (with a lid), cook the ground beef and chopped yellow onion over medium heat, breaking up the beef with a spoon, until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the uncooked long-grain white rice, beef broth, undrained diced tomatoes, frozen mixed vegetables, dried oregano, salt, and black pepper to the skillet. Stir everything together to combine.
- Bring the mixture to a simmer, then reduce heat to low, cover the skillet, and cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove from heat and let stand, covered, for 5 minutes. Fluff the rice with a fork.
- While the skillet meal rests, prepare the bagged green salad mix by tossing it with dairy-free Italian dressing.
- Serve the Skillet Ground Beef and Rice with the side salad.
Notes
If you don't have an oven-safe skillet with a lid, you can transfer the mixture to a baking dish, cover tightly with foil, and bake at 350°F (175°C) for 20-25 minutes.
