- 1.25 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 0.5 cup yellow onion (chopped)
- 2 clove garlic (minced)
- 1 teaspoon dried Italian seasoning

- 14.5 ounce diced tomatoes (undrained)
- 3 cup chicken broth (low-sodium)
- 8 ounce whole wheat rotini pasta
- 5 ounce fresh spinach
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the 1 1/4 pounds of chicken breast pieces and cook for 5-7 minutes, stirring occasionally, until lightly browned. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper.
- Add 1/2 cup chopped yellow onion and 2 minced garlic cloves to the skillet. Cook for 3-4 minutes, until onion softens. Stir in 1 teaspoon dried Italian seasoning.
- Pour in the 14 1/2 ounce can of diced tomatoes (undrained) and 3 cups low-sodium chicken broth. Bring the mixture to a simmer. Add 8 ounces whole wheat rotini pasta and the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Reduce heat to medium-low, cover, and cook for 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed. If it seems too dry, add a splash more broth or water.
- Stir in the 5 ounces of fresh spinach until wilted, about 1-2 minutes. Serve immediately.
Notes
Ensure chicken is cooked through before adding other ingredients. Adjust seasoning to your family's taste. Leftovers are excellent for lunch the next day.
