Skillet Garlic Herb Chicken with Whole Wheat Pasta

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the 1 1/4 pounds of chicken breast pieces and cook for 5-7 minutes, stirring occasionally, until lightly browned. Season with 1/4 teaspoon salt and 1/4 teaspoon black pepper.
  2. Add 1/2 cup chopped yellow onion and 2 minced garlic cloves to the skillet. Cook for 3-4 minutes, until onion softens. Stir in 1 teaspoon dried Italian seasoning.
  3. Pour in the 14 1/2 ounce can of diced tomatoes (undrained) and 3 cups low-sodium chicken broth. Bring the mixture to a simmer. Add 8 ounces whole wheat rotini pasta and the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  4. Reduce heat to medium-low, cover, and cook for 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed. If it seems too dry, add a splash more broth or water.
  5. Stir in the 5 ounces of fresh spinach until wilted, about 1-2 minutes. Serve immediately.

Notes

Ensure chicken is cooked through before adding other ingredients. Adjust seasoning to your family's taste. Leftovers are excellent for lunch the next day.
