  1. Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add 1/2 pound chicken breast pieces and cook for 3-4 minutes until lightly browned. Remove chicken from skillet and set aside.
  2. Add 0.5 diced yellow onion to the skillet and cook for 3 minutes until softened. Stir in 2 minced garlic cloves and cook for 1 minute more until fragrant.
  3. Pour in 1 can diced tomatoes and 1 cup chicken broth. Add 4 ounces broken whole wheat spaghetti, ensuring it’s mostly submerged. Bring to a simmer.
  4. Reduce heat to medium-low, cover, and cook for 10-12 minutes, stirring occasionally, until pasta is al dente. If liquid evaporates too quickly, add a splash more broth or water.
  5. Stir in the cooked chicken, 2 ounces cream cheese, 2 cups fresh spinach, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook, stirring, until the spinach wilts and cream cheese is melted and combined, about 2-3 minutes.
  6. Serve hot and enjoy straight from the skillet.
