Ingredients
- 0.5 pound boneless, skinless chicken breast, cut into 1-inch pieces
- 0.5 each yellow onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounce) diced tomatoes, undrained
- 1 cup chicken broth
- 4 ounces whole wheat spaghetti, broken in half
- 2 ounces cream cheese
- 2 cups fresh spinach
- 1 tablespoon olive oil

- 0.25 teaspoon black pepper
Instructions
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add 1/2 pound chicken breast pieces and cook for 3-4 minutes until lightly browned. Remove chicken from skillet and set aside.
- Add 0.5 diced yellow onion to the skillet and cook for 3 minutes until softened. Stir in 2 minced garlic cloves and cook for 1 minute more until fragrant.
- Pour in 1 can diced tomatoes and 1 cup chicken broth. Add 4 ounces broken whole wheat spaghetti, ensuring it’s mostly submerged. Bring to a simmer.
- Reduce heat to medium-low, cover, and cook for 10-12 minutes, stirring occasionally, until pasta is al dente. If liquid evaporates too quickly, add a splash more broth or water.
- Stir in the cooked chicken, 2 ounces cream cheese, 2 cups fresh spinach, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook, stirring, until the spinach wilts and cream cheese is melted and combined, about 2-3 minutes.
