  1. Place the diced Russet potato in a microwave-safe bowl with 1 tablespoon of water. Cover and microwave on high for 3-4 minutes, or until just tender. Drain any excess water.
  2. Heat olive oil in a large skillet over medium heat. Add the thinly sliced yellow onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the pre-cooked Russet potato to the skillet and cook for 3-5 minutes, stirring occasionally, until lightly browned.
  4. Stir in the flaked cod fillets and frozen peas. Cook for 2-3 minutes, gently breaking up the fish.
  5. Pour the lightly beaten eggs over the mixture in the skillet. Cook, stirring gently, until the eggs are just set but still creamy, about 2 minutes. Stir in the sliced black olives, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
