Instructions
- Place the diced Russet potato in a microwave-safe bowl with 1 tablespoon of water. Cover and microwave on high for 3-4 minutes, or until just tender. Drain any excess water.

- Add the pre-cooked Russet potato to the skillet and cook for 3-5 minutes, stirring occasionally, until lightly browned.
- Stir in the flaked cod fillets and frozen peas. Cook for 2-3 minutes, gently breaking up the fish.
- Pour the lightly beaten eggs over the mixture in the skillet. Cook, stirring gently, until the eggs are just set but still creamy, about 2 minutes. Stir in the sliced black olives, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Garnish with fresh parsley and serve immediately.
