Ingredients
- 1 tablespoon olive oil
- 12 ounces boneless, skinless chicken breast, cut into 1-inch pieces
- 2 cups broccoli florets
- 1 medium zucchini, quartered lengthwise and sliced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 2 tablespoons water
- 1/2 tablespoon fresh lemon juice
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breast pieces and cook for 5-7 minutes, stirring occasionally, until lightly browned and mostly cooked through. Transfer chicken to a plate.
- Add the broccoli florets and zucchini slices to the same skillet. Cook for 5 minutes, stirring occasionally, until vegetables start to soften. Add the minced garlic, dried oregano, and dried thyme, then cook for 1 minute more until fragrant.
- Return the chicken to the skillet. Pour in the water and fresh lemon juice. Stir everything together and cook for 2-3 minutes, allowing the flavors to meld and vegetables to finish cooking to your desired tenderness. Serve immediately.
