  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook, breaking the beef apart with a spoon, until it is browned, about 5 minutes. Drain any excess fat from the skillet.
  2. Add the thinly sliced yellow onion, thinly sliced red bell pepper, and thinly sliced green bell pepper to the skillet with the beef. Cook, stirring occasionally, until the vegetables begin to soften, about 5-7 minutes.
  3. Stir in the garlic powder, paprika, and dried oregano. Cook for 1 minute more until the spices are fragrant.
  4. Pour in 1/2 cup of beef broth and bring the mixture to a simmer. Cook for 2-3 minutes, allowing the flavors to meld and the sauce to reduce slightly. Taste and adjust seasoning with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper if needed.
  5. While the beef mixture is cooking, prepare a simple side salad: In a medium bowl, combine the chopped romaine lettuce, halved cherry tomatoes, and sliced cucumber. Toss with 1/2 cup of store-bought vinaigrette dressing.
