Skillet Beef Quesadillas

Crispy flour tortillas filled with seasoned ground beef and melted cheese, cooked to perfection in a skillet, served with a fresh black bean and corn salad.

  1. Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Add 0.5 diced yellow onion and cook for 3-4 minutes until softened.
  2. Add 1/2 pound ground beef to the skillet. Cook, breaking it apart, until browned. Drain any excess grease.
  3. Stir in 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon garlic powder, and 1/2 teaspoon salt. Cook for 1-2 minutes until fragrant.
  4. While beef cooks, in a small bowl, combine 1/2 cup rinsed black beans, 1/2 cup drained corn, the juice of 0.5 lime, and 1 tablespoon chopped fresh cilantro. Mix well to create the black bean and corn salad.
  5. Wipe out the skillet. Place 1 flour tortilla in the skillet over medium heat. Sprinkle half of the 1 cup shredded Monterey Jack cheese over one half of the tortilla. Top with half of the seasoned ground beef. Fold the other half of the tortilla over.
  6. Cook for 2-3 minutes per side, until the tortilla is golden brown and crispy and the cheese is melted. Repeat with the remaining ingredients for the second quesadilla.
  7. Cut each quesadilla in half and serve immediately with the black bean and corn salad.
