Ingredients
- 0.5 pound ground beef
- 0.5 yellow onion (diced)
- 1 teaspoon chili powder
- 0.5 teaspoon cumin
- 0.25 teaspoon garlic powder
- 4 flour tortillas (8-inch)
- 1 cup Monterey Jack cheese (shredded)
- 0.5 cup black beans (rinsed and drained)
- 0.5 cup corn (drained)
- 0.5 lime (juiced)
- 1 tablespoon fresh cilantro (chopped)
- 1 teaspoon olive oil
- 0.5 teaspoon salt
Instructions
- Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Add 0.5 diced yellow onion and cook for 3-4 minutes until softened.
- Add 1/2 pound ground beef to the skillet. Cook, breaking it apart, until browned. Drain any excess grease.
- Stir in 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon garlic powder, and 1/2 teaspoon salt. Cook for 1-2 minutes until fragrant.
- While beef cooks, in a small bowl, combine 1/2 cup rinsed black beans, 1/2 cup drained corn, the juice of 0.5 lime, and 1 tablespoon chopped fresh cilantro. Mix well to create the black bean and corn salad.
- Wipe out the skillet. Place 1 flour tortilla in the skillet over medium heat. Sprinkle half of the 1 cup shredded Monterey Jack cheese over one half of the tortilla. Top with half of the seasoned ground beef. Fold the other half of the tortilla over.
- Cook for 2-3 minutes per side, until the tortilla is golden brown and crispy and the cheese is melted. Repeat with the remaining ingredients for the second quesadilla.
- Cut each quesadilla in half and serve immediately with the black bean and corn salad.
