Skillet Beef & Potato Hash

  1. Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add 1 pound ground beef and cook, breaking it apart, until browned. Drain any excess fat and set aside.
  2. In the same skillet, add 1/2 diced yellow onion, 1 diced red bell pepper, and 2 cups diced Yukon gold potatoes. Cook, stirring occasionally, for 10-12 minutes until potatoes are tender-crisp and vegetables are softened. If needed, add a splash of water and cover for a few minutes to help cook the potatoes.
  3. Return the cooked ground beef to the skillet. Stir in 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 2-3 minutes, stirring to combine the flavors.
  4. Preheat oven broiler. Sprinkle 1/2 cup shredded cheddar cheese over the hash in the skillet.
  5. Place the skillet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Watch carefully to prevent burning.
  6. Serve hot directly from the skillet.

Notes

You can use pre-cooked potatoes from the store to save on time, just sauté for less time until heated through. For an even quicker meal, use frozen diced potatoes.
